Pink velvet. There’s just something saucy about that. Especially when you add the word cookie to the sentence.
Pink velvet cookies. Can I confess something? I was never a huge fan of red velvet but pink velvet… now that’s a flavor that own me. I don’t know if it’s the cotton candy flavor or if it’s the gloriously pink color but I can’t get enough of it.
Especially when I can get it in cookie form.
So we’re not super big on Valentines in the traditional romantic fashion but as I’ve said before, I love any excuse to create ultra girly pink things. I live in a house full of boys. You can’t deny me the simple pleasure of the occasional pink piece of decor. Or the ridiculous amount that is about to happen.
Of course, this year I couldn’t stop at decor. I had to bring it into the kitchen too. But that’s not my fault! It’s my husband’s fault. He wanted cookies! How could I not make them pink to show how much I love and adore him?
And pink velvet.
I’m not kidding. These cookies are pink perfection. They are soft and sweet. They honestly are like cotton candy in cookie form. Which is incredible since I love cotton candy so much.
Obviously I’m not the only one since my husband took a bag into work and left with two. Ahem. He likes cookies.
And I like how simple it is. Because, my dear friend, it’s from a cake mix. A cake mix!!! And it takes less than 5 minutes to prep. Through a pink velvet cake mix into a bowl, add some oil, water and an egg and you’re ready to get cooking!
Be sure to package some up for someone in your life that loves cookies. You know… like yourself. Because you deserve them.
Ready to make some? Let’s go!
- pink velvet cake mix
- 1/4 cup of oil
- 1/4 cup of water
- 1 egg
- Preheat oven to 375.
- Combine all ingredients and drop by the teaspoonful on a cookie sheet covered in parchment paper.
- Bake for 10 minutes.
- Allow to cool completely before eating.
