I’m done with winter. No, don’t try to talk me out of it. I’m over the snow, over the cold and over not being able to enjoy the summer treats that I love so much.
All right, that’s not entirely fair. I can have many of them now but there’s some stigma about having a watermelon in February. I think it’s because watermelon tastes like paper at this time of year. I don’t know.
What I do know is that I won’t make it till spring without some of my favorite summer treats. And most of those treats do come in the form of a cobbler.
To be more specific, Peach Cobbler. And since fresh peaches aren’t exactly ideal right now, frozen will do.
Okay, so frozen will more than do!
This cobbler is so so simple to make and it takes less than 5 minutes to throw together. 5 minutes of prep and about 40 minutes of bake time.
Now, in the summer I would complain about the baking… you know. It’s already hot, why would I want to heat my house up further? But baking cobblers in the winters sure does have it’s merits. First of all, cobbler. I don’t even need to say anything else. Second of all, any extra heat in my house is a welcome treat. What can I say? I live in a household of boys that stay hot so the heat is never quite as high as I like it.
So what’s the verdict on this summer dish gone winter?
Well… It only made it for about 10 minutes after I took photos. Because those boys that are always too hot also always down for a baked good. Even the husband. And they gave it a two thumbs up.
Actually, it was more of a muffled grunt of approval but you know… same thing.
Ready to make some of your own? Let’s do it!
- 1 cup of flour
- 1 cup of sugar
- 2 tsp of baking powder
- 1/2 tsp of salt
- 2 cups of frozen peaches
- Lightly grease a 9 x 9 pan. Preheat oven to 350.
- Combine all ingredients except peaches.
- Pour the mixture into your baking pan and then top with the frozen peaches.
- Bake for 40 minutes.
- Allow to cool slightly; serve.
